I’m not an amazing baker. I LIKE baking. I’m just not very good at it.
Case in point: Shortly after my husband and I got married, I had a complete failure of an evening. I tried to do his laundry, hard boil some eggs, and make banana bread. I ended up with a whole load of still damp t-shirts and no more coins for the dryer, an empty kettle with a hole burned in the bottom, a pot of cold water and uncooked eggs, and a mess of overflowing burnt and soupy bread batter all over the bottom of the oven.
Over the years, I’ve scoured the internet for good recipes for banana bread and banana muffins. I love them so much, but so often mine end up being too dry or flavourless.
And then… I found Dinner With Julie. The cool thing is that she’s from Calgary, where I live! And her banana muffin recipe is AMAZING.
I’ve made it twice in as many weeks. The first time, I didn’t have quite enough bananas, but it was still tasty. The second time, I added an extra banana so it wouldn’t go to waste and, oh goodness, were the muffins delicious. (I did add some chocolate chips, because hey, why not!)
Why do I love banana muffins so much?
- They are a fantastic breakfast treat – tasty and super easy to grab and go.
- They are easy to take with you when you need to run out the door and need breakfast or a snack on the road.
- They pair perfectly with a cup of tea and a book.
